Orchard to Table in 9 Steps
Shaking the Trees: We use mechanical shakers to gently dislodge ripe pecans.
Collecting: The next day, we gather pecans from the orchard floor.
Sorting: Hand-sorting removes debris and imperfect nuts.
Drying: Pecans are dried to preserve flavor and texture.
Cracking: Two passes ensure clean extraction of nut meat.
Shelling: We separate the meat from shell fragments.
Sorting Again: A second sort ensures no shells remain.
Aspiration: Air removes lightweight debris like dust.
Final Inspection and Packaging: Only the best pecans are bagged for sale.
